The mission of our faculty is to educate individuals who contribute to society through an innovative and sustainable educational approach that supports scientific knowledge production and prioritizes collaboration with industry stakeholders. Our vision is to become a respected institution in the field of applied sciences that is quality-oriented, internationally focused, pioneering, and centered on stakeholder satisfaction. As the Department of Gastronomy and Culinary Arts, we have systematically integrated this institutional framework into our program educational objectives. The primary objectives of our program are to educate graduates who integrate theoretical knowledge with practical skills in gastronomy, evaluate culinary culture from a scientific perspective, embrace sustainable gastronomy principles, comply with hygiene, food safety, and quality standards, and demonstrate innovative and entrepreneurial competencies.
As emphasized on our departmental website, our curriculum has been designed with an interdisciplinary approach and presents a holistic structure encompassing culinary applications, gastronomy history, food and beverage management, nutrition, sustainability, and regional culinary culture. This structure aims to develop not only students’ technical culinary competencies but also their analytical thinking, problem-solving, teamwork, communication, and ethical responsibility skills. Our program learning outcomes include competencies such as acquiring comprehensive disciplinary knowledge, developing practical skills, implementing food safety and hygiene standards, recognizing and preserving cultural gastronomic values, conducting scientific research, and adopting a lifelong learning perspective. In accordance with our faculty’s educational policy, practice-based learning constitutes a fundamental component of our program. In this regard, students gain professional experience through training kitchens, educational and application facilities, industry collaborations, and internship opportunities. In particular, the application hotel and professional kitchen infrastructure enable students to translate theoretical knowledge into real service environments, thereby facilitating the tangible achievement of program learning outcomes. Furthermore, regional culinary heritage is integrated into course content and practical training in order to preserve and promote local gastronomic values. In this respect, our department occupies a distinctive position by integrating the gastronomic potential of the Edremit Gulf region into academic production and educational processes.
Within the scope of our quality assurance processes, program educational objectives and learning outcomes are regularly reviewed based on feedback from internal and external stakeholders, industry expectations, graduate feedback, and academic evaluation reports.
